Chocolate. Marshmallows. Graham crackers. What’s not to love, right? There are few things in life more perfect than sitting around a campfire with friends and/or family, roasting marshmallows, then squishing them between graham crackers and chocolate, taking a bite and giggling uncontrollably as the s’mores innards ooze down your face. It’s one of life’s simple pleasures, and an activity I can enjoy pretty much year-round (flashback to many happy memories of roasting marshmallows in my fireplace with my family on a cold winter’s night). Personally, I’ve never even needed the graham crackers or chocolate; just gimme a stick, a marshmallow, and a campfire, and I’m one happy little camper (pun intended). So, when I came across this s’mores cupcake recipe, I was intrigued. And I wanted it. Immediately. Luckily, with the weekend right around the corner and no recipe in the queue, it took me only a few days to make this dream a reality. And let me tell you – I needed to be pinched to ensure I wasn’t still dreaming when I bit into these little morsels of perfection.
I can FINALLY post this because both my brothers FINALLY received their packages! This post has been seriously delayed because the United States Postal Service failed to deliver my packages to my brothers in any sort of timely fashion. (I sent it 2-day priority, by the way, last Monday.) Christopher just got his package today and Patrick just picked his up today (even though it had been waiting in his mailbox since Thursday! Noob!). Anyway, there is no more secret to hide so I can post about my cookie adventure. Enjoy.
In case you do not constantly read my blog, or you do and are just very forgetful (I know, Grampie, it’s hard to remember all the little kiddos with your senility*), I have twin brothers who just went off to college this fall. Patrick is nice and close at Catholic in D.C., and Christopher is far away at Brandeis in Boston. And last Thursday, the 26th, was their 19th birthday. While college is a huge adjustment, and they are very busy between a college course load, soccer, and (ahem) partying, I know they will have the time of their lives once they settle in! Also, they are finally realizing how awesome their family is and (gasp!) they miss us! Funny how college suddenly changes your whole perspective on your family and home…And again, they just turned 19!!!
This weekend, I made some cupcakes, which I will post on later, but, it got the wheels in my head spinning out of control over what the difference is between a muffin and a cupcake. I know, I know, I know, Amy’s wedding was two whole weeks ago – what have I been doing with my life? Why am I slacking on posting about the wedding cake? Honestly? I’ve been sleeping, and watching a lot of TV, and taking Miss Daisy to the park many, many times. Yes, I’ve been relaxing, and with Christian being in NH last week, I was busy being a single puppy parent, which – let me tell YOU – isn’t easy. I cannot even imagine what being a single human baby parent must be like. At least a puppy I can leave home alone and lock up when I need to get things done. I think putting a baby human in a cage is frowned upon…And I’m pretty sure leaving one home alone is neglect and/or abandonment…either way, puppy = way easier than baby. I get it mother. No worries. (That statement was legitimately for my mother.) And then this week, between entertaining my little monster and entertaining Daisy (I so funny), it has taken me all week to complete this post! But I digress…Back to the point: THE WEDDING CAKE!
