Sooo, let’s start with the good news first. I made an adorable little 6″ round cake last weekend. My standard vanilla yellow cake recipe with classic buttercream frosting. It was very cute, and tasted delicious, see?

Last weekend’s review and this weekend’s menu (hey that rhymes!)
An evening with my love (Taylor Swift, of course):
As those who are following my blog may know, last weekend I took Friday (mostly) off and went to NYC with my sis, mom, and grandma (henceforth to be referred to by her proper name, Abue, short for abuela – funny sidenote: when I was younger I used to make up little poems and put them in cards for all birthdays, holidays, etc. One birthday I wrote “Aube” – to be pronounced Auuuuube – instead of Abue, and I firmly believe I will NEVER hear the end of it. I also will NEVER make that mistake again!). ANYWAY, we saw the Newsies on Broadway at the Nederlander Theater, which was just a short walk from our hotel, which was awesome! Even if the show was terrible (which it was not), there is nothing wrong with watching a bunch of attractive young men dance and sing like crazy! The show was amazing and my sister and I fulfilled our childhood dream of seeing the show which we have watched the movie of countless times (we were obsessed). We even stayed after to take pictures with some boys 🙂

As a sidenote from my usual baking ramblings…This train of posts over the next few days is more directed to my fellow Lafayette Alumni…Stay tuned as I reveal some big news…
**Worry not, I will still have a baking adventure this weekend and will fill you all in early next week (I think I’m tackling a vanilla cream filling this weekend)!**
Hint 1:
Over the 4th of July Holiday weekend, a secret wedding took place, and has remained secret, until now…
Vanilla Cupcakes with Lime Curd Filling and Blackberry Buttercream Frosting!
Over the 4th of July weekend, I decided to take on lime curd, one of the fillings for Amy’s wedding cake. I used this filling in vanilla cupcakes with fresh blackberry buttercream frosting. We picked the blackberries straight from the garden at my grandfather’s. (I had to send a helper to pick a second batch because some people, ehem, ate my first batch!) I spent the holiday at his beach house with family, Christian, and of course, Miss Daisy.
Taylor Swift TOMORROW!!!
I think one very important thing you all need to know about me sooner rather than later is that I love Taylor Swift. I loved her before she was loved by everyone, and before screaming teenagers followed her around everywhere and before she went on tour. I loved her from the very first time I heard “Tim McGraw”. (That song will always be my favorite Taylor Swift song, and will always hold a special place in my heart, because it introduced me to Taylor.) I loved her when I saw her for the first time in person opening for Rascal Flatts, and the most recent time I saw her on the Speak Now tour in her sparkly dresses which I relate to and love so much. I have loved her from day 1 of hearing her, and I am proud to call myself a Swifty.
I saw an interview with some music or news guy somewhere on some channel at some time where he said that if Taylor Swift wasn’t a super cute, young, blonde girl, worshiped by preteens everywhere, that she would be considered a truly great song-writer. I totally agree. It is undeniable that the girl’s got talent and that she knows what she’ doing. UNDENIABLE. Please, just try to deny it. I dare you. I’ll delete your comment so quick! (I don’t take kindly to Taylor Swift-bashers. Haha. I don’t insult your music or trash-talk your artists, and my musical interest has no impact on you whatsoever, so let me be.) 🙂 Her music will grow and mature as she grows and matures, and I can’t wait to see what the future holds.
ANYWAY – I’M GOING TO SEE TAYLOR SWIFT TOMORROW! It will be my 4th meeting with Tay Swift in concert. My mom, my sister, my grandmother, and I are making the trek up to New York City to see Newsies on Broadway tomorrow night, followed by the main attraction (for me, anyway), Taylor Swift, on Saturday night. Yes, I am driving across several state lines to make it to a Taylor Swift concert. It is out of my control though – My cousin got married the weekend Taylor Swift is in D.C., forcing me to find another concert elsewhere that I could attend. Missing Taylor Swift on tour is not an option. I am sickly now and may be drugged up on cough syrup and cold medicine, but no rain, nor storm, no illness, nor apocalyse will keep me from that concert. I love her, and I will be there to show my support, and I could not be happier. That is all.
*I don’t know about you, but I’m feeling 22!
Everything will be alright if you keep me next to you!*
Raspberry Mousse
This weekend, I made raspberry mousse to go in my cake. This was to practice one of the fillings for Amy’s wedding cake. I didn’t really do too much for decorating – just threw some sugar flowers I had previously made on top once I iced it. I won’t go into too much detail, but will state the highlights:
